Ingredients:
- 250 grams of chopped butter
- 1000 grams of dried fruit
- 200 grams of sugar
- water
- 5 eggs
- 130 ml of rum
- a half teaspoon of soda
- a teaspoon of lemon rind
- 275 grams of flour
- cherries for decorating
Directions:
- grease a deep 24 cm round cake tin, line base and sides with 3 layers of baking paper.
- place butter, water, fruit, brandy and sugar in a saucepan.
- boil, stir, then simmer for 20 minutes.
- stir in soda.
- stir the flour and eggs in the mixture.
- decorate with cherries.
- Bake for more than 2.5 hours.
- cover cake with foil and cool in tin
Tips:
you can use a golden syrup instead of treacle
