Rich Fruit Cake


Name: Rich Fruit Cake

Difficulty: Easy

Preparation Time: 20 minutes


Ingredients: 

  • 250 grams of chopped butter
  • 1000 grams of dried fruit
  • 200 grams of sugar
  • water
  • 5 eggs
  • 130 ml of rum
  • a half teaspoon of soda
  • a teaspoon of lemon rind
  • 275 grams of flour
  • cherries for decorating

Directions:

  • grease a deep 24 cm round cake tin, line base and sides with 3 layers of baking paper.
  • place butter, water, fruit, brandy and sugar in a saucepan.
  • boil, stir, then simmer for 20 minutes.
  • stir in soda.
  • stir the flour and eggs in the mixture.
  • decorate with cherries.
  • Bake for more than 2.5 hours.
  • cover cake with foil and cool in tin

Tips:

you can use a golden syrup instead of treacle
