Slow-Cooker White Bean Soup With Andouille and Collards

  1. In a 4- to 6-quart slow cooker, combine the beans, sausage, onion, celery, and thyme. Add the broth and stir to combine.
  2. Cover and cook until the beans are tender, on low for 7 to 8 hours or on high for 4 to 5 hours (this will shorten total cooking time).
  3. Twenty minutes before serving, discard the thyme stems, add the collard greens, cover, and cook until the greens are tender, 15 to 20 minutes. Add the vinegar and ½ teaspoon each salt and pepper.
  4. Drizzle with the olive oil and serve with the bread sticks.

  1. In a 5- to 6-quart slow cooker, place the chicken, carrots, celery, onion, garlic, bay leaves, 6 cups water, 1 teaspoon salt, and ¼ teaspoon pepper.
  2. Cook, covered, until the chicken is cooked through, on high for 4 to 5 hours or on low for 7 to 8 hours (the low setting will make total cooking time 8 ½ hours).
  3. Twenty minutes before serving, transfer the chicken to a bowl. Remove and discard the onion and bay leaves. If the slow cooker is on the low setting, turn it to high. Add the pasta to the slow cooker, cover, and cook until tender, 15 to 18 minutes.
  4. Meanwhile, shred the chicken. When the pasta is cooked, stir the chicken into the soup along with the parsley. Serve with the crackers, if desired.

  1. Puree the tomatoes, onion, and garlic in a blender until smooth. Add the vinegar, 2 tablespoons of the oil, and ½ teaspoon each salt and pepper and pulse to combine.
  2. Heat grill to medium. Once it is hot, clean the grill grate with a wire brush. Just before grilling, oil the grill grate.
  3. Top 4 slices of the bread, dividing evenly, with the ricotta, herbs, and ½ teaspoon pepper. Sandwich with the remaining slices of bread. Drizzle the tops and bottoms of the sandwiches, dividing evenly, with the remaining 2 tablespoons of oil.
  4. Grill until the bread is toasted and the cheese is warm, 2 to 3 minutes per side. Serve with the tomato soup.

  1. Heat the oil in a large saucepan over medium heat. Add the onion, carrots, celery, and ¼ teaspoon salt and cook, stirring occasionally, until just tender, 10 to 12 minutes. Add the broth, hominy, and 2 cups water and bring to a simmer.
  2. Meanwhile, heat broiler. In a medium bowl, combine the pork, egg, bread crumbs, chipotles, and ½ teaspoon salt. Form the pork mixture into 20 meatballs (about 1 heaping tablespoon each) and place on a broilerproof baking sheet. Broil until cooked through, 7 to 8 minutes.
  3. Add the meatballs and lime juice to the soup. Sprinkle with the cilantro and serve with the lime wedges.

Tomato Soup With Parmesan and Croutons

Ingredients

  • 2 onions, chopped
  • 2 tablespoons olive oil
  • kosher salt
  • 1 28-ounce can whole peeled tomatoes, with juices
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 cup croutons
  • 2 ounces Parmesan, shaved

Directions

  1. Cook the onions in the oil with ½ teaspoon salt in a large pot over medium heat, stirring occasionally, until softened, 4 to 6 minutes.
  2. Add the tomatoes, chicken broth, and oregano. Simmer until beginning to thicken, 10 to 15 minutes.
  3. Transfer to a blender and puree until smooth. Top with the croutons and Parmesan before serving.

  1. Heat the oil in a large pot or Dutch oven over medium heat. Add the carrots and/or parsnips, celery, onion, thyme, 1½ teaspoons salt, and ¼ teaspoon pepper. Cook, stirring frequently, until the vegetables are tender and just beginning to brown, 10 to 12 minutes.
  2. Add the chicken, broth, and 4 cups water. Bring to a boil, reduce heat, and simmer until the chicken is cooked through, 15 to 20 minutes. Remove the chicken and place on a cutting board. When it is cool enough to handle, shred the meat with 2 forks; discard the bones.
  3. Meanwhile, add the pasta to the soup and simmer until al dente, 6 to 10 minutes. Add the chicken, lemon juice, and parsley and stir to combine.
  4. This soup can be frozen in freezer-safe containers for up to 3 months. To reheat, run the containers under warm water until the soup slides out. Transfer to a pot and cook over medium heat, covered, stirring occasionally, until heated through.

Barley and Lentil Soup

Ingredients

  • 2 tablespoons canola oil
  • 6 scallions, chopped, white and green parts separated
  • 4 cloves garlic, chopped
  • 1 tablespoon finely chopped ginger
  • 2 tablespoons tomato paste
  • 1 1/2 tablespoons curry powder
  • 1 13.5-ounce can coconut milk
  • 1 cup dried red lentils
  • 1 cup pearl barley
  • kosher salt
  • 1 cup yogurt

Directions

  1. Heat the oil in a large pot over medium heat. Add the scallion whites, garlic, and ginger. Cook, stirring frequently, until soft, 3 to 4 minutes. Add the tomato paste and curry powder. Cook, stirring, until the tomato paste darkens, 1 to 2 minutes.
  2. Add the coconut milk, lentils, barley, 4 cups water, and ½ teaspoon salt and bring to a boil. Reduce heat and simmer, stirring occasionally, until the lentils and barley are tender, 35 to 45 minutes (adding more water if needed to loosen).
  3. Serve topped with the scallion greens and yogurt.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 fennel bulb, chopped, plus fronds for serving
  • 2 tablespoons tomato paste
  • 1 pound peeled and deveined medium shrimp
  • 2 8-ounce bottles clam juice
  • 1 14.5-ounce can diced tomatoes
  • kosher salt and black pepper

Directions

  1. Heat the oil in a large saucepan over medium heat. Add the onion, carrot, and chopped fennel and cook until softened, 6 to 8 minutes. Stir in the tomato paste.
  2. Add the shrimp, clam juice, tomatoes and their juices, and 1½ cups water to the saucepan. Season with ½ teaspoon salt and ¼ teaspoon pepper. Simmer until the shrimp are opaque, about 2 minutes. Sprinkle with the fennel fronds.

Cucumber-Avocado Soup With Prosciutto Toasts

Ingredients

  • 2 English cucumbers, peeled and chopped
  • 1 avocado, pitted and peeled
  • 1/2 cup plain low-fat Greek yogurt
  • 2 tablespoons fresh tarragon leaves, plus more for serving
  • 1 teaspoon grated lemon zest, plus 3 tablespoons fresh lemon juice
  • kosher salt and black pepper
  • 4 slices whole-wheat bread, toasted
  • 2 tablespoons unsalted butter
  • 4 ounces thinly sliced prosciutto

Directions

  1. Puree the cucumbers, avocado, yogurt, tarragon, lemon zest and juice, 1½ cups water, ½ teaspoon salt, and ¼ teaspoon pepper in a blender until smooth. Adjust the consistency with more water if desired. Chill if desired.
  2. Spread the toast with the butter and top with the prosciutto, dividing evenly.
  3. Serve the soup sprinkled with tarragon, accompanied by the prosciutto toasts.

Colombian Chicken and Potato Soup

Ingredients

  • 4 cups low-sodium chicken broth
  • 1 pound boneless, skinless chicken thighs (about 4)
  • 4 frozen corn-on-the-cob pieces (sometimes called “cobbettes”)
  • 1 tablespoon olive oil
  • 1 small onion, thinly sliced
  • 1 celery stalk, thinly sliced
  • 4 garlic cloves, thinly sliced
  • 2 medium russet potatoes (about 1 pound), peeled and cut into 1-inch pieces
  • 2 tablespoons fresh lime juice, plus wedges for serving
  • 1/4 teaspoon dried oregano
  • kosher salt and black pepper
  • cut-up avocado, fresh cilantro sprigs, and capers, for serving

Directions

  1. In a large saucepan or Dutch oven, combine the chicken broth and 1 cup water and bring to a boil. Add the chicken and corn and simmer until the chicken is cooked through, 10 to 12 minutes.
  2. Remove the chicken and corn from the saucepan and reserve.
  3. Strain the cooking liquid into a large bowl or measuring cup and reserve.
  4. Wipe out the saucepan and heat the oil over medium heat. Add the onion, celery, and garlic and cook, stirring occasionally, until beginning to soften, 2 to 3 minutes. Add the potatoes and the reserved cooking liquid and bring to a boil. Reduce heat and simmer until the pota-toes are cooked through, 15 to 20 minutes.
  5. Meanwhile, shred the chicken and cut the corn pieces into 1-inch-thick rounds. Return the chicken and corn to the soup. Add the lime juice, oregano, ½ teaspoon salt, and ¼ teaspoon pepper and cook until heated through, about 1 minute. Serve the soup with the avocado, cilantro, capers, and lime wedges
