Spicy Jalapeno-Rosemary Turkey Burgers

Spicy Jalapeno-Rosemary Turkey Burgers
Grilling season is upon us!  That makes me a happy girl!!!  You don’t always have to cook the same old burgers and hot dogs you know.  I kicked it up a notch here, not just making a healthier burger by using ground turkey, but I kicked up the spice level by adding not one, but four jalapenos.  Yes, four, you read that right.  And to tell you the truth, they had just enough heat, not too much and the perfect amount of flavor.  Turkey needs that extra flavor, whatever you can get it and this jalapeno and rosemary combo really does the trick.
I really wanted to make some type of mayo-like sauce, something different, to go with these burgers.  I have been in the mood for caramelized onions so…being on the Greek yogurt kick that I’ve been on lately, I combined the caramelized onions with some Greek yogurt to make this sauce and it was just what these burgers needed.
Caramelized Onion Yogurt Sauce for Turkey Burgers
I ate my burger on a grilled whole wheat English Muffin but you can do whatever your little heart desires.  These burgers were a great change from the regular old beef ones.

Yield: 12 burgers
Spicy Jalapeno-Rosemary Turkey Burgers and Caramelized Onion Yogurt Sauce
Ingredients
For the burgers:
2 pounds ground turkey
Few dashes of Worcestershire
1 Tbsp Dijon mustard
1 Shallot roughly chopped
4 Jalapenos, roughly chopped, ribs and seeds discarded
1 spring Rosemary, roughly chopped
¼ tsp salt
1/8 tsp pepper
1 tsp garlic powder
¾ tsp dried oregano
Extra Virgin Olive Oil
For the Caramelized Onion Yogurt Sauce:
1 yellow onion, halved and sliced
2 Tbsp extra virgin olive oil
Salt to taste
½ tsp garlic powder
Dash or two of white wine vinegar
½ cup non-fat Greek yogurt
Instructions
For the Burgers:
Combine the jalapeno, shallot, and rosemary in a food processor and process until you have a real finely chopped mixture
Put the jalapeno mixture in a large bowl with the Worcestershire, mustard, salt, pepper, garlic powder, and oregano and combine
Add in the ground turkey and mix together until the evenly distributed
Form into burgers (I used a 1/3 cup measuring cup to make them all consistent in size)
Refrigerate burgers for at least an hour to firm up a bit
When you are ready to make the burgers, remove them from the refrigerator and brush with a little bit of olive oil
Spray the grill with cooking spray and heat it to medium-high heat
Grill the burgers until done, about 5-6 minutes per side
For the Caramelized Onion Yogurt Sauce:
Caramelize the onions by heating 2 Tbsp of olive oil in a large skillet over medium heat. Once hot, add the onions and sprinkle with some salt. Let the onions cook for a few minutes being careful not to burn. Stir only every few minutes so that they can caramelize for about 30-40 minutes. You can add sugar if you wish.
Once the onions are done, let them cool. Once cooled, add them to a food processor with the rest of the ingredients and process until smooth. Refrigerate for at least an hour before eating.
