Ingredients
- 2 (8-inch x 7-inch) soy wrappers
- 1/2 cup Avocado Bleu Cheese Dressing (see make ahead recipe below)
- 6 slices Roma tomatoes, thinly sliced
- 2/3 ripe, Fresh Hass Avocados, peeled, seeded and cut into thin slices
- 2 1/2 oz. cooked chicken breast, thinly sliced
- 2 slices turkey bacon, cooked crisp
- 1 oz. romaine, shredded
- 1 large, fresh basil leaf, julienned
Avocado Bleu Cheese Dressing
- 3 Tbsp. ripe, Fresh Hass Avocado, peeled, seeded and mashed
- 5 Tbsp. Bleu cheese dressing
Instructions:
- Assembly:
Spread the soy wrapper with 2 tsp. Avocado Bleu Cheese Dressing over the entire wrapper. - Begin layering on the bottom half of the wrapper.
- Top with 3 slices tomato.
- Top with 3 slices Fresh Hass Avocado*.
- Top with 1 1/4 oz. thinly sliced chicken.
- Top with 1 slice crisp cooked bacon.
- Top with 1/2 oz. shredded romaine.
- Top with about 5 pieces of julienne basil.
- Roll up tightly. (Shelf life refrigerated is 2 hours.)
- Serve with 1/2 oz. Avocado Bleu Cheese Dressing on the side for dipping.
Avocado Bleu Cheese Dressing
- Mix together all ingredients. Refrigerate.
