Ingredients
- 1 ripe Hass Avocado, halved, seeded, peeled and sliced
- 2 Tbsp. lime juice
- 2 Tbsp. olive oil
- 1 Tbsp. chopped fresh mint
- 1 1/2 cups baby arugula
- 1 apple, cored and sliced
- 1/4 English cucumber, peeled and sliced
- 6 thin slices feta cheese
- 8 slices bread
Instructions:
- In a medium bowl combine lime juice, oil, mint and salt; stir in arugula.
- Place avocado slices on 4 slices of the bread. Top each with apple, cucumber and feta cheese. Divide arugula salad over all. Top with remaining 4 slices of bread.
